Liivimaa beef is one of those treasures which could put Estonia on the food map of the world. Estonia has the most grassland per person in Europe, let’s appreciate that with delicious meat! Beef brisket is like undiscovered gold. Stomach muscles are surrounded by a thin layer of fat. During prolonged cooking, the muscles are tenderized and the fat layer melts, giving the meat a flavour that also melts in your mouth.

Domestic raw produce has always been dear to our hearts. The dish is simple and delicious!

I love Estonian beef

Grilled tenderloin of beef with dewberry sauce. Served with mushroom salad and gratin of potatoes, celery and plum.

Estonian beef, especially tenderloin and sirloin, are in high demand and highly respected among true gourmands. The raw produce comes from Liivimaa.

I like using local raw produce and beef is one of them. By using Liivimaa beef, I also support Estonian farmers who give us the chance to make our foods out of fresh and organically grown produce.
