My favourite raw food is undoubtedly carrot. Carrot has been my favourite already since childhood – I was a different kind of child, who liked carrot cooked, in sauces etc.
This has remained the same until today. I use carrot raw, cooked, in puree or dessert. As raw material, on one hand, carrot is simple, but on the other hand also sophisticated and very original. It can be used for preparing plain food, or more complicated dishes. An exciting fact about carrot is that everything of it can be used – stem, peel and the vegetable itself. Bright colour of carrot gives life to food.
Today, carrot is actually more than just my favourite food – in our cafe Markofka operating in Tallinn, Tulika Street, we use much domestic raw material.
