Pearl barley nigiri trio
Three pearl barley nigiris with smoked moose meat, beef and Rufous milkcap. “Põltsamaa wasabi” and pickled turnip.
Pearl barley was selected due to its historical importance on the Estonian table as well as for its nutritious properties, because barley is full of valuable proteins and contains a lot of the essential amino acids lysine and tryptophan. Pearl barley contains an average of 1-1.5% of fat, 76.8% of carbohydrates, 8.5% of protein, as well as calcium, phosphorus and iron.
Our dish is special due to serving a 9000-year-old food through modern food culture.
