I love Estonian pike perch

The tender and smooth flavour of zander, a fish related to perch, allows for creativity in the kitchen. As a domestic and seasonal product, zander is always fresh, making it good for quality dishes. The flavour of zander doesn’t dominate, therefore it can be easily combined with various foods. The flavour combination and texture differences between two domestic foodstuffs make the dish special: the sweetness of carrot emphasizes the tender flavour of zander in the best possible way.
