Fried Estonian sturgeon steak with orosotto and grayfish sauce
Sturgeon is the fish of the kings but nonetheless uncommon in Estonian restaurants. Sturgeon is boneless, so it’s very easy to eat and the meat is excellent.
I’ve had sturgeon from Härjanurme fish farm near my birthplace in smoked and fried form. It’s always delicious.
