Red beet carpaccio marinated in juice pressed from home-grown apples, with beet leaves, beet chips, parmesan and red beet hummus, made by the head chef. The red beet for restaurant Kaerajaan is grown in Saare farm in Kivi-Vigala. This is genuine Estonian food made of raw produce which was grown with love right here on Estonian fields.
Estonians have grown and eaten beet for centuries. Besides its excellent nutritional value, beet is also called the healing vegetable, containing a remarkable amount of various minerals and vitamins.
Our head chef Jaak Hiibus brings out the various nuances of this wonderful vegetable in different forms and introduces the different serving possibilities for beet.
