Sturgeon roe and meat are a delicacy of high regard in the world. Our sturgeon comes from Härjanurme farm in Southern Estonia.
This fish has wonderfully rich flavour which is ideal for our Russian and French cuisine. The flavour of our dish is special, we offer sturgeon meat with ox tail confit – these two different foodstuffs match well and complement each other.
